What I Learned – Vanishing Oatmeal Raisin Cookies

oatmealcookiesHaving made oatmeal cookies a million times or so, I didn’t expect to learn something new when I made a double batch for nephew Michael’s wedding. The problem: should I just double the recipe or make an adjustment to the recipe? There is definitely a difference of opinion on the Internet. I decided to go to the source, the company that produces Quaker Oats. Although there were other options for obtaining information, I called the toll-free number. I really wanted to speak with a person to resolve this matter ASAP and with certainty. No way would I take any chances with these cookies.

What I learned:

1) It is not necessary to adjust the recipe when doubling Vanishing Oatmeal Raisin Cookies.

2) The company provides provides courteous, professional and well informed staff to answer questions. That was true of the rep I spoke with, and I assume that’s a matter of policy and planning. I wish I remembered her name so that I could mention her here.

Btw, make sure you crank up the air-conditioning to almost too cold if you are baking in hot, humid weather. Let the cookies cool for 4 hours or so before wrapping. The goal is to avoid sogginess. Chewy is good – soggy is a big letdown.
