Welcoming Baby William

Honestly, I don’t like making things like potato salad. The process is repetitive and not interesting. But, this occasion was different. A dear friend was giving a shower for her daughter-in-law. So, I peeled the potatoes, etc., combined the ingredients, and then it occurred to me. I was part of welcoming William to the world. Cool. Very cool. And kisses and hugs too.

Baby William’s Potato Salad

The Basics:

  • 5 lb potatoes, peeled and cut into cubes or similar bite-sized pieces
  • 1 heaping cup Hellmann’s mayonnaise
  • 2 tablespoons white vinegar
  • ½ teaspoon black pepper
  • 1 teaspoon dried dill
  • 1 cup finely chopped onions
  • 1 cup thinly sliced celery
  • 4 chopped hard-boiled eggs

Potato SaladBoil potatoes until just tender, about 5 minutes. Drain in colander. Cool slightly.

Boil eggs and cool.

Combine mayo with seasonings and vinegar in large bowl.

Gradually add potatoes.

Chop eggs.

Add eggs, celery and onion. Gently mix ingredients and refrigerate overnight.

Adjust seasonings.
