A Little Fresh Basil and Much More

My share in a CSA has benefits and challenges. Here’s what I did to use a  handful of delicious fresh basil.

The Basics:

  • About 2 ounces of fresh mozzarella, cut into small pieces
  • 1 large tomato, chopped
  • A peeled and cut-up cucumber
  • A handful of fresh basil, gently cut into strips
  • Italian seasoning
  • Salt
  • Extra virgin olive oil
  • Red wine vinegar

Combine fresh ingredients and cheese.

Add salt, Italian seasoning, oil and vinegar to taste. photo 1
