Looking for some quick and easy comfort food to help pass the day when trapped inside by foul weather AGAIN? Food Sharing Network has a simple recommendation.

I consider myself fortunate that I like to cook for many reasons. For one thing, it’s a great way to pass the time when the weather keeps us in. Each meal takes on big importance. Here’s a reminder about a quick and easy classic breakfast or lunch. Take it from me, the combo is great with coffee after shoveling, although purists probably will prefer milk. Keep the simple ingredients on hand. Spring is more than a few weeks off (oh no).

Toasted English Muffin

  • Crisply toasted English muffin. Soggy will not do.
  • 100% all natural peanut butter*, i.e., just peanuts or peanuts and salt
  • Your favorite jelly, jam or preserves

You know the drill: spread on peanut butter, then jelly. Proportions depend on your preference.

Do not make a sandwich. The combination hitting the roof of your mouth is the best part.

* Skip the kind of peanut butter that has added fat. You might as well eat shortening by the spoonful.

I like Nature’s Promise Organic Peanut Butter for the taste, and because it doesn’t separate after stirring and is still easy to spread after being refrigerated. Also, it is a wholesome food, as opposed to many of the peanut butters that are high in fat, salt and sugar. Read the label on the peanut butter jar before making your selection.
