Sweet Potato Casserole Supreme

Friday night supper was raised to a whole new status when I made this sweet potato casserole. The yummy dish was inspired by a recipe given to me verbally by Food Sharing Network contributor Helena Dinis. I hope that I did it justice.

Sweet Potato Casserole Supreme

The Basics:

  • 2 large sweet potatoes, peeled and cut up into chunks
  • 2 ounces butter, cut up
  • ¼ cup brown sugar
  • ¼ cup heavy cream
  • 1/8 teaspoon ground nutmeg (optional)
  • 1 egg
  • ½ cup chopped walnuts

Sweet Potato Casserole SupremeBoil potatoes until very tender.

Meanwhile, preheat oven to 375 degrees.

Mash potatoes with butter.

Mash in brown sugar, nutmeg and heavy cream.

Mix in egg.

Turn into 8 inch baking dish or the equivalent.

Sprinkle nuts on top.

Bake until very hot throughout and bubbly on the edges, about 20 minutes.
