Baby Spinach Salad with Peaches, Feta and Red Onion

Peach SaladThe peach on my kitchen counter was calling my name. For a change, I had found peaches that were delicious. Juicy, sweet and tasty. Just ripe enough so that I needed a sharp knife to eat them without making a mess.

Baby Spinach Salad

with Peaches, Feta

and Red Onion

The Basics:

Amounts are approximate

  • 5 cups baby spinach
  • I large, ripe peach cut into bite-sized pieces (Use a sharp knife to keep them appetizing.)
  • 1/8 cup crumbled feta
  • 4 tablespoons finely chopped red onion
  • Extra virgin olive oil
  • Red wine vinegar
  • Salt, freshly ground pepper, Italian seasoning to taste

Gently combine the spinach, peach pieces, feta and onion.

Sprinkle lightly with seasoning.

Sprinkle on about 2 tablespoons vinegar. Add just enough* olive oil to coat the spinach. Toss.

Let sit for 10 minutes. Adjust ingredients as needed. Serve.

*Too much oil or vinegar will cause the spinach to wilt.
