Smokey Linguine with Ham and Peas

This quick and easy dish shared by Food Sharing Network contributor Rose Ellen Lorber-Termaat is especially appealing in the summer, but well received any time of the year by true pasta lovers. Serve it with a crisp salad and Italian bread for a nice change from heavier fare.

Smokey Linguine with Ham and Peas

The Basics:

  • 1 lb linguine
  • 2 cloves garlic, chopped
  • 1 medium onion, chopped
  • 4 tbs. olive oil
  • 1 tbs. butter
  • 6 oz. smoked ham, cubed
  • 1 cup frozen peas, thawed
  • Salt and ground pepper to taste
  • Grated Parmesan cheese
Light but Satisfying

Light but satisfying.

Cook pasta according to directions until al dente.

Strain cooked pasta, reserving 1 cup pasta water.

In a large pan heat olive oil, cook onion and garlic until onion is translucent.

Add butter to pan and melt.

Add peas and cubed ham to pan, and cook 2 to 3 minutes.

Toss pasta with onions, peas, ham and garlic.

Add pasta water to create a light sauce.

Add salt and pepper to taste.

Serve with grated Parmesan cheese.
