Slow Cooker Pineapple BBQ Beef

Craving a cook-out? Use your slow cooker to make BBQ beef cooked with pineapple for a hearty sandwich any time of the year. Many thanks to the Six Sisters for this recipe, which I made for a party with their homemade sweet potatoes fries. Both were a hit.

Slow Cooker Pineapple BBQ Beef

The Basics:

  • 1 2 to 3 lb beef rump roast
  • 1 20 ounce can pineapple chunks, juice reserved
  • 1 onion, diced
  • 1/2 cup apple cider vinegar
  • 1/3 cup brown sugar
  • 1/2 cup ketchup
  • 1 tablespoon mustard (Dijon is recommended)
  • 2 tablespoons Worcestershire sauce
  • Non-stick cooking spray

Place roast inside.

In a separate bowl, mix together pineapple juice, onion, vinegar, brown sugar, ketchup, mustard, and Worcestershire sauce. Pour over roast.

Add pineapple chunks.

Cook on low for 10 hours or high for 5 to 6 hours.

When finished, shred meat using two forks. The meat should just fall apart.

Serve meat on toasted buns, topped with sandwich fixings such as red onions, lettuce, tomatoes and provolone cheese.
