Shrimp with Peppers, Onions and French Green Beans

I like to keep a bag of frozen raw shrimp in the freezer for the tough days when I know it’s going to be difficult to cook. Ironically, that’s usually when we need a home cooked meal most.

and French Green Beans

Serves 2

The Basics:

  • Canola oil
  • 1 ½ cups French green beans (harcourt vert)
  • 2 yellow peppers cut into strips
  • 1 medium onion thinly sliced
  • 12 to 16 large raw shrimp cleaned and rinsed. Tails on or off.
  • Cayenne pepper, ground
  • Ginger, ground
  • Garlic powder
  • Salt
  • Tamari soy sauce, 2 tablespoons plus

Coat a large fry or sauté pan with the oil.

Cook green beans in oil on medium high heat for 2 minutes.

Add peppers and onions.

Sprinkle seasonings liberally to taste, especially ginger.

Cook until vegetables are almost done and lightly browned.

Add Tamari soy sauce and heat through.

Add shrimp and cook quickly just until opaque, about 2 minutes.

Serve with rice, extra Tamari sauce and fresh tomatoes on the side. Here I dressed the tomatoes with Jane’s Krazy Mixed-Up Pepper, a family favorite.

Taste alert: Do not cover pan while cooking. That will make the vegetables soggy.
