Salmon with Shrimp

Salmon with Shrimp

Serves 2

The Basics:

  • Salmon steak*, about 3/4 lb
  • 10 extra large raw shrimp, cleaned and shelled
  • Juice of one small lemon, freshly squeezed
  • Salt
  • Pepper
  • 2 to 3 gloves garlic, finely minced or crushed
  • 2 tablespoons butter
  • Extra virgin olive oil, about 2 tablespoons
Sometimes only a carefully seasoned fish dish will do.

Salmon with Shrimp

Rinse salmon and shrimp with cold water, removing any debris. Leave both in colander for about 10 minutes to drain.

Coat bottom of frying pan with olive oil.

Melt butter in pan with oil.

Cook garlic with salt and pepper for about 1 minute over medium heat.

Add salmon.

Over medium high heat, grill salmon with garlic, salt and pepper 5 minutes.

Turn over salmon. Cook 3 minutes. Make sure garlic doesn’t get dark.

Add shrimp and lemon juice.

Turn shrimp in about 1 minute when a light golden color.

Cook shrimp only until opaque. Remove each shrimp to serving dish when done and cover to keep hot.

Salmon is done when no longer pink inside.

Tip: Removing individual ingredients when done is key. It all happens quickly. Watch carefully!

*You can substitute skinless salmon filet by adjusting cooking times.
