Light but Satisfying: Salmon with Scallions

I like to use my stainless steel All Clad fry pan for fish. It cooks well and is easy to clean.

The Basics:

  • 2/3 lb salmon, skin removed
  • 6 to 10 scallions, cut up
  • Ground ginger
  • Salt
  • Freshly ground pepper
  • Juice of 1 lime
  • Olive oil

Coat bottom of frying pan with oil.

Cook scallions for two minutes on medium.

Push aside scallions. Add salmon. Moisten top of fish with a bit more olive oil. Season everything with salt, pepper and ginger to taste.

Cook 5 minutes.

Serve with lightly salted ripe tomatoes and a baked potato for a simple but satisfying meal.

Turn over salmon and scallions. Pour lime juice over fish.

Cook about 5 minutes more, taking care not to burn scallions. Salmon is done when all the pink is gone.
