Oven Roasted Cod with Fresh Tomatoes

You may be surprised to learn how easy it is to make a tasty, healthful dinner using fresh cod. As much as we like fish cakes and fish ‘n chips made with this mild but tasty fish, we certainly can appreciate other uses.

Oven Roasted Cod with Fresh Tomatoes

The Basics:

Serves 2

  • 3/4 lb fresh cod steak, cut into big chunks
  • 2 large ripe tomatoes, quartered
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons dried bread crumbs, unseasoned
  • Juice of 1/2 lemon, freshly squeezed
  • Salt
  • Freshly ground black pepper
  • Freshly grated romano cheese
  • About 5 handfuls of baby spinach, rinsed and dried
  • Cooking spray

Oven Roasted Cod with TomatoesPreheat oven to 425 degrees.

Spray baking dish, which should just fit ingredients.

Arrange fish and tomatoes.

Brush fish with oil.

Drizzle oil on tomatoes.

Top fish and tomatoes with bread crumbs.

Sprinkle on seasonings and cheese to taste.

Bake for 8 minutes.

Add lemon juice and return pan to oven for about 2 more minutes.

Food is done when fish flakes easily with fork.

Remove pan from oven and keep hot.

Coat fry pan lightly with oil.

Sauté spinach just until wilted.

Combine on platter and serve.
