One-Pot Poached Cod Entree

Oh, the humble cod dinner. I keep on singing its praises. Think of it as light, healthy comfort food. Wild caught cod is also readily available by me and often on sale.

One-Pot Poached Cod Entree

Serves 2

The Basics:

  • 4 to 6 purple potatoes, trimmed as needed and thinly sliced*
  • 8 cups boiling water
  • 8 chicken bullion cubes
  • 1 medium onion, thinly sliced
  • 1 heaping handful fresh basil**
  • 10 cocktail tomatoes, halved
  • ½ teaspoon salt plus
  • ½ teaspoon freshly ground pepper plus
  • ¾ lb cod, seasoned all around with salt and pepper

Poached CodCombine everything except the cod.

Bring to a boil, stir well, and simmer covered for 45 minutes.

Add cod, simmering gently until fish separates easily with a fork, about 4 to 6 minutes.

Serve quickly to avoid reheating.

* This is the first time I had purple potatoes. All I did was remove the few flaws such as eyes. Delicious!

** You must use fresh basil. It is what makes this recipe special.

I served the dish with steamed broccoli, but I think a salad might have been a better choice because the meal is exceptionally light.
