Shredded Kale and Rice Salad

After last week’s delectable CSA pickup from Richfield Farms in Clifton, NJ, I knew I had to make something really good. Fortunately, I had just come across a recipe for kale salad by one of my favorite cookbook writers, Jeanne Lemlin. Although I did not have all the ingredients, I took Jeanne’s advice and went ahead with some substitutions. Pictured here is my version, but I refer you to her recipe, Shredded Kale and Rice Salad, which I think you might like better. My version was fine, but I definitely missed the red onion and feta cheese, although romano cheese did its own tasty job.
