Just in Time for Halloween – Pumpkin Cookies

Food Sharing Network contributor Helena Dinis provides us with another delicious, but easy, homemade dessert – Pumpkin Cookies. Do note the attractive way that Helena serves them. A pretty platter makes homemade cookies even more appealing.

Helena’s Pumpkin Cookies

The Basics:

  • 1 cup unsalted butter (2 sticks)
  • 1 cup sugar
  • 1 cup cooked, pureed pumpkin (fresh or canned)
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 cups flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon baking soda
  • ½ teaspoon nutmeg
  • 1 cup chopped walnuts
  • 1 cup raisins

1021142114 - Version 2Preheat oven to 350 degrees.

Cream butter and sugar until fluffy.

Add pumpkin, egg and vanilla and mix well.

Combine flour, baking powder, baking soda, salt, cinnamon and nutmeg.

Stir dry ingredients into butter mixture until well blended.

Add nuts and raisins.

Drop by teaspoonfuls onto parchment-covered baking sheet, about 2 inches apart.

Bake about 15 minutes, or until golden brown.


Variation: Cutting back on butter? Reduce the butter to ¾ cup (1½ sticks) and use one more egg (for a total of 2).
