Hats Off to Joe

What I am about to share is the farthest thing from a culinary masterpiece. However, with Father’s Day coming up, it seems just right.

After my mother died, my father perfected a small repertoire of company meals so he could have us to his home. Breaded pork chops with mashed potatoes were his specialty. They can be yours too.

In a whimsical moment, I can see this outstanding host cooking them up for his buddies in heaven.

Pork Chops with Kellogg’s Corn Flake Crumbs

The Basics:

  • 4 large center cut pork chops
  • 2 cups Kellogg’s Corn Flake Crumbs
  • 1 egg
  • 3 tablespoons reduced fat milk
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper

Cover large shallow pan with foil.

Beat together milk, egg and spices.

Coat chop in milk batter.

Coat chop in crumbs to cover well. You can go as generous as possible.

Bake for about 30 minutes, just until meat turns white. Avoid overcooking. Today’s pork is very lean and easy to dry out.

Remove from oven and serve.
