Hail, Arugula

Arugula is so flavorful that making a salad with it is easy and simple. Experiment, and you’ll find other fruit, cheese and nuts that can be substituted.

Baby Arugula Salad

with Apples

The Basics:

Arugula is a versatile and underused vegetable.

Peppery arugula is a versatile vegetable.

5 cups baby arugula, rinsed and dried well

1 Honeycrisp apple (or other sweet, crisp apple), peeled, cored and cut into bites-size pieces

1/3 cup chopped walnuts

2 ounces crumbled goat cheese

1/2 tsp. salt

1 1/2 tsp. Italian seasoning

White balsamic vinegar

Extra virgin olive oil

Tossing lightly, combine arugula, apple, walnuts, salt and Italian seasoning.

Sprinkle on vinegar. Toss.

Add just enough oil to wet leaves. Toss.

Add goat cheese. Toss VERY lightly.

Adjust seasonings according to taste. Serve.
