Got Eggplant? Stuff It!

Stuffed Eggplant with Feta

Inspired by Michael Chiarello, Food Network

There is something about a blemish-free, plump eggplant that makes me want to buy it. I was happy to find Mom’s Stuffed Eggplant by Michael Chiarello on the Food Network website. Thanks for the inspiration, Michael. My version includes two changes: feta cheese for parmesan and no red pepper, only because I wanted to make sautéed peppers as a side.
