Food Sharing Network guest contributor Jill Mathieu shares another recipe featuring fresh vegetables. This one was inspired by her CSA (Community Supported Agriculture). The dish is not only tasty – it gives new meaning to the expression “quick and easy.”
Before the bean crops end, enjoy this simple and delicious recipe with feta and Kalamata olives.
The Basics:
Snap off stems of beans, and steam for 5 minutes or blanche for 1 minute. For more tender beans, cook until desired doneness.
Drain beans immediately and toss with olives, cheese, a little bit of extra virgin olive oil and coarse salt, according to taste. Serve warm or at room temperature. It is that simple!
