Garden Beans with Feta and Kalamata Olives

Food  Sharing Network guest contributor Jill Mathieu shares another recipe featuring fresh vegetables. This one was inspired by her CSA (Community Supported Agriculture). The dish is not only tasty – it gives new meaning to the expression “quick and easy.”

Before the bean crops end, enjoy this simple and delicious recipe with feta and Kalamata olives.

Garden Beans with Feta and Kalamata Olives

The Basics:

  • About 4 servings beans, yellow and/or green
  • 1/2 cup coarsely chopped pitted Kalamata olives
  • Crumbled feta cheese
  • Extra virgin olive oil
  • Coarse salt

Garden Beans with Feta and Kalamata OlivesSnap off stems of beans, and steam for 5 minutes or blanche for 1 minute. For more tender beans, cook until desired doneness.

Drain beans immediately and toss with olives, cheese, a little bit of extra virgin olive oil and coarse salt, according to taste. Serve warm or at room temperature. It is that simple!
