Fruit Salad with Attitude

Summer is the time to have fun. Poke your guests with fruit salad made with mini-marshmallows and maraschino cherries. Kids (big and little) will be especially pleased to happen across one of these sweet candied treats.

Fruit Salad with Marshmallows

and Maraschino Cherries

The Basics:

  • Ripe fresh fruit (15 – 18 cups) including a variety of choices such as 8 nectarines and peaches, 1 pint blueberries, 1 quart strawberries, I small cantaloupe, 1 small bunch seedless red grapes, 1 small bunch seedless green grapes
  • 1 20-ounce can pineapple chunks packed in juice
  • 1 14-ounce can Roland’s mandarin orange segments packed in water, drained
  • 2 cups mini-marshmallows
  • 2 dozen maraschino cherries without stems, rinsed and drained

Rinse fresh fruit in cold water and drain well.

Cut peaches, nectarines and cantaloupe into bite-sized pieces with a very sharp knife and place in large bowl. A five-quart stainless steel pot with a cover works well too.

Add pineapple with juice. With this and each addition, mix gently.

Pick over blueberries and strawberries, discarding bad berries and stems. Slice strawberries. Add and mix.

Cut grapes in half and add to bowl.

Add cherries and mini-marshmallows, mix, cover and refrigerate for an hour or two before serving.
