Easy and Guilt-free: Cauliflower Pizza

My sister, Patricia, couldn’t wait to tell me about the cauliflower pizza her friend Tonya made for her. Truthfully, I had never heard of it before, but since then I have learned that cauliflower pizza is becoming increasingly popular, as more people eat gluten-free or try to cut down on calorie-laden items such as pizza crust. For whatever reason you choose to go this route, expect a tasty meal. Many thanks for this recipe, inspired by Tonya and shared by Patricia.

Cauliflower Pizza

The Basics:

  • 1 12-ounce bag riced cauliflower, cooked according to directions, cooled and drained
  • 1 cup whole milk shredded mozzarella
  • 1/4 cup grated parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 2 large eggs, lightly beaten
  • 1/2 cup pizza sauce
  • Thinly sliced toppings, such as mushrooms, peppers, tomatoes, onions – cook’s choice

Using a clean towel, wring the cauliflower dry. Place in medium bowl.

Stir in eggs, 1/2 cup mozzarella, parmesen, garlic powder and salt.

Line a baking sheet with parchment paper.

Form 10 inch circle with combined ingredients.

Bake at 400 degrees until golden.

Spread on sauce and toppings, and cover pizza with remaining cheese.

Bake about 10 more minutes until cheese is melted and pizza is very hot.
