Dinner Eggs for Two

It’s time to make dinner, and the meat is far from defrosted. How about a satisfying egg dish?

Dinner Eggs for Two

The Basics:

  • Olive oil
  • Canola cooking spray
  • 4 asparagus, tough ends discarded
  • 2 medium potatoes, peeled
  • Salt
  • Freshly ground black pepper
  • Garlic powder
  • Paprika
  • 5 eggs, beaten with a pinch of salt

Cut off tips of asparagus and slice the rest into small pieces.

Thinly slice potatoes.

Coat bottom of large fry or sauté pan with olive oil.

Using medium heat, cook potatoes and asparagus with seasonings added to taste until vegetables begin to brown. Add canola oil spray if pan goes dry.

Cover and steam for 3 minutes or until vegetables are tender.

Remove cover and moisten pan with canola oil spray. Add eggs and proceed as though making scrambled eggs, turning combo frequently after it becomes set on one side.

Serve immediately.

Lovely with buttered toast and fresh fruit or salad.
