Chocolate Icebox Cake

Want to treat your sweetie to a homemade chocolate dessert on Valentine’s Day, but short on time to bake? A classic chocolate icebox cake made from Nabisco’s FAMOUS Chocolate Wafers may be just the thing. Make it the day before, cover tightly (I use my cake keeper) and refrigerate at least four hours before serving. Goes well with a bottle of bubbly or any romantic libation that suits your fancy.

“FAMOUS” Chocolate Icebox Cake

The Basics:

  • 2 cups whipping cream
  • 1 tsp. vanilla
  • 1 pkg. FAMOUS Chocolate Wafers

DSC_5008Beat cream with mixer on high speed until stiff peaks form. Gently stir in vanilla.

Spread 1-1/2 tsp. whipped cream evenly on each wafer.

Stack “sandwiches” and stand the stack on edge on platter. I like to make a square. The sample on the cookie package is more of a rectangle.

Frost with remaining whipped cream.

Cover tightly and refrigerate at least 4 hours. Cut into diagonal slices to serve.
