Back by Popular Demand: Ice Cream Sundae Pie

If you love ice cream (who doesn’t?), try Food Sharing Network’s Ice Cream Sundae Pie. Yummy for any gathering – or just because you crave a special dessert.

Ice Cream Sundae Pie

The Basics:

Crust:

  • 1/3 cup chocolate syrup
  • 8 marshmallows cut into small pieces
  • 1 ½ cups regular or gluten-Free Rice Krispies
  • 1/2 cup coconut
  • 1 tablespoon soft butter

Filling:

  • 2 14 ounce containers ice cream (chocolate and vanilla)
  • ¼ cup chocolate syrup
  • ¼ cup sour cream

Stir together marshmallow pieces and 1/3 cup syrup. Melt mixture in microwave or double boiler, stirring and watching very carefully.

Add Rice Krispies and coconut.

Butter a 9.5 inch deep-dish pie plate.

Spread mixture evenly in pie plate on bottom and on sides a bit from the top.

Freeze crust for about 45 minutes.

Meanwhile, soften ice cream but don’t allow it to melt. Please note: We used Haagen Dazs Chocolate and Vanilla Bean, and the Vanilla Bean softened more quickly.

Combine remaining syrup and sour cream.

Quickly spread chocolate ice cream in pie plate.

Top with half of syrup and sour cream mixture.

Spread vanilla ice cream on top.

Drizzle with rest of sour cream mixture.

Wrap in plastic wrap and freeze until solid.

You can use any flavor ice cream you like, of course. Stick to a classic combo as we did or replicate your favorite sundae.

Why gluten-free products?

We make a point of using products that were designated as gluten-free or considered gluten-free to accommodate one of our regular guests. Btw, we learned that not all food companies were up-to-date on marking their gluten-free products as such.
