Baked Tomato for Two

Even when it doesn’t make the cut as particularly tasty, a large ripe tomato makes for a worthy side dish for two.

The Basics:

  • 1 large ripe tomato, cut in half
  • Extra virgin olive oil
  • Dried basil or Italian seasoning
  • Salt
  • Freshly ground black pepper
  • Grated Romano or Parmesan cheese

Preheat oven to 375 degrees.

Brush the bottom of a small baking dish, preferably cast iron, with oil. The smallest dish you have that works is best.

Place tomato pieces in the dish and brush top with more oil.

Sprinkle lightly with seasonings.

Pile on a thick layer of grated cheese.

Baked uncovered for 15 to 20 minutes until cheese is melted and a bit brown.

Whether to use Romano or Parmesan is a matter of personal preference. My first choice is Romano, the more subtle and less salty cheese.
