An Apple Pie Alternative

Not up for making an apple pie? Our humble One-Bowl Apple Cake, featured by Taste Magazine in its Fall 2013 edition, takes about 15 minutes to get into the oven after you finish preparing the fruit.

One-Bowl Apple Cake

The Basics:

Serve as a simple snack or plate with a scoop of vanilla ice cream for a luscious dessert with dinner.

3 eggs

1¾ c. sugar

1 c. corn oil

2 c. flour

1 tsp. cinnamon

1 tsp. baking soda

½ tsp. salt

½ cup chopped walnuts or pecans

Soft butter

4 large Granny Smith apples, peeled, cored and cut into bite-sized pieces

Pre-heat oven to 350 degrees.

Beat eggs and sugar well.

Add oil, flour, spices and salt.

Stir in nuts and apples.

Pour batter into well-buttered tube pan. (I use wax paper to spread the butter.)

Wrap the bottom of the tube pan with foil to minimize leaking.

Bake for about an hour, until tester inserted in center comes about clean and cake is beginning to pull away from sides of pan.

Cool in pan at least 30 minutes.

Best the same day.
