Ah, the lovely tomato.

Looking for a way to showcase the bounty of your summer garden? Food Sharing Network is pleased to share two recipes with you.

Baked Tomatoes

The Basics:

  • 4 large tomatoes, stem removed and sliced in half widthwise
  • Extra virgin olive oil
  • Salt
  • 3/4 cup freshly grated parmesan or romano cheese, plus

Pre-heat oven to 375 degrees.

Place tomatoes skin down with sides touching.

Drizzle with olive oil.

Salt lightly.

Spoon on cheese.  Feel free to pile it on higher, if desired.

Bake uncovered for about 20 minutes until hot throughout and lightly browned.

Cobb Salad with Spicy Deviled Eggs

Perhaps you are fortunate enough to have both tomatoes and lettuce – and maybe even red onions –  in your garden. Try Kathy’s version of Cobb salad, featured on Jersey Bites this week. You don’t have to live in New Jersey to like this tasty combo of veggies and ingredients such as blue cheese, avocado and bacon.
