A simple dinner was just right.

It is easy for me to dismiss some of my own ideas as too mundane for a post. But then, I share a quick and easy menu with a good cook and host who appreciates the new info. So here it goes – a chicken sausage dinner for four that is ready in less than thirty minutes. As a bonus, there probably will be leftovers for another meal.

I made this meal with my sister-in-law Jill, a Food Sharing Network contributor. Jill and Raymond, my husband’s brother, were about to leave for their trip home after the internment of my husband’s parents. I considered providing Jill and Raymond with a bagged supper for later, but we decided we could eat then, although it was a bit early for dinner.

Jill prepared the tomatoes while I made the potatoes and chicken sausage. We were done in plenty of time to eat and digest before they had to leave for their train. It was fun, and I couldn’t help but think that Mom, who was an outstanding mother and host, would have been pleased to know that we shared a good meal at the end of a bittersweet day.

Chicken Sausage Dinner for Four

The Basics:

  • 8 Al Fresco Spicy Jalapeno Chicken Sausages
  • 8 top-sliced hot dog rolls
  • Canola spray
  • 4 Yukon gold potatoes, scrubbed clean
  • 8 large tomatoes, sliced in half. Remove stem end.
  • ½ cup grated Parmesan cheese
  • Extra virgin olive oil
  • Salt
  • Dried basil

Quick and Easy Sausage DinnerPreheat oven to 375 degrees.

Spray fry pan and cook sausages at medium to medium-high until hot through and brown on most sides.

Meanwhile, microwave the potatoes at high, piercing after 4 minutes, until done, about 7 minutes. Immediately place potatoes in pre-heated oven on a piece of foil or baking sheet to crisp skin.

Place tomatoes, skin side down, in a microwaveable dish. It’s good if the pan is filled so the tomatoes don’t tip over when cooked.

Drizzle with oil, season and cover with cheese.

Microwave uncovered until soft throughout and cheese is melted, about 8 minutes.

The tomatoes also can be cooked in the oven, but they will take longer, about 20 minutes. The cheese will get lightly browned, a nice touch.

Dinner in less than 30 minutes and not too much cleanup.  If you like spicy sausage, try this easy meal.
